Ingredients for 3 servings:
- 2 zucchinis
- 1 jar of frying oil (approx. 200 – 250 ml)
- a little oil for frying
- 1 garlic clove(s), squeezed
- 250 g shrimp(s) or crab
- ½ jar white wine (approx. 125 ml)
- Parsley
- salt and pepper
- 250 g linguine or other long pasta
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Cut the zucchini into thin slices. Heat the oil in a large frying pan and fry the zucchini slices in batches until golden brown. Remove the fried zucchini slices from the oil and place them on a plate. Do not drain; they should remain in the oil. In a separate pan, fry the crushed garlic in a little oil. Add the shrimp and after 2 to 3 minutes, deglaze with the white wine. Add salt, pepper, and parsley. Simmer for about 10 minutes, until all but a small amount of the wine has evaporated. Then turn off the heat. Meanwhile, boil salted water for the pasta and cook the pasta according to the package instructions. Drain the pasta; do not turn off the heat. Return the drained pasta to the pot on the stove. Add the shrimp and zucchini and mix well. Sprinkle a little more parsley over the top.
