Linzer croissants

Ingredients for 1 servings:

  • 250 g butter or margarine
  • 150 g powdered sugar
  • 3 egg yolks
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • ½ lemon(s), the juice
  • 350 g flour, strong or universal
  • 200 g apricot jam
  • 100 g cake icing, chocolate

Working time approx. 20 minutes; Total time approx. 20 minutes

Cream the soft butter (margarine) with the icing sugar, egg yolk, salt and vanilla sugar until fluffy. Stir in the lemon juice. Slowly stir the flour into the foam. Line a baking tray with baking paper or grease it with butter (margarine). Fill a piping bag with the batter and carefully pipe the croissants onto the baking tray (not too close together). Bake in a preheated oven at 180°C (gas mark 2-3) for approx. 10-15 minutes, depending on the size, until golden brown. Allow the croissants to cool. Spread one croissant with jam and place a second one on top. Dip both ends of the croissant in the chocolate glaze. Of course, other jams can also be used for the Linzer croissants, e.g. strawberry jam.
