Linzer nut cookies

Ingredients for 1 servings:

  • 300 g flour
  • 200 g sugar
  • 280 g butter
  • 200 g hazelnuts, ground or walnuts
  • 1 tsp clove(s)
  • 2 tsp cinnamon (or more to taste)
  • 1 jar jelly (blackcurrant)
  • 1 bar of dark chocolate coating
  • 1 bag of walnuts (200 g)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix flour, sugar, and spices. Cut room-temperature butter into small pieces and knead together. Chill the dough. You can also prepare the dough a day in advance. Roll out the dough (it’s best not to use all of it, just a piece at a time so it doesn’t get warm), cut out shapes (even sizes), and place them on the baking tray. Bake at 170°C (they shouldn’t be dark). Carefully remove the cookies from the baking tray (they’ll be very crumbly and will break otherwise) and spread the blackcurrant jelly on them while they’re still warm, sticking them together. Melt the chocolate coating and spread it on the cookies. Place half a walnut (or a whole one if you like) on top. I have leftover walnuts that I can use up for something else. The result is the best nut cookies I know.
