alcohol
- 200 ml Vodka
- 200 g Rock sugar
spices
- 0,5 piece Vanilla pod scraped out
- 0,25 piece Grated tonka beans
- 3 piece Red chilli flakes
- 1 jag Star anise
fruit
- 225 g Cherries fresh
Preparation
- Wash the cherries, remove the seeds, weigh 200 grams and quarter … vanilla pod lengthways third
Manufacturing
- Fill an airtight glass jar with rock candy and vodka … add strips of vanilla pods, chilli flakes, star anise and freshly ground tonka bean … add pieces of cherry
- Close the glass vessel … Shake the contents … approx. Let it mature for 4 months at room temperature … for the first four weeks, shake the glass jars every day and shake the cherry liqueur 2-5 times for the rest of the time
Bottling
- Line a sieve with a cotton cloth and place it in a wide and high collecting vessel … Shake the cherry liquor into the sieve, allow it to drain and squeeze out the residue (approx. 400 ml)
storage
- Fill into pretty bottles and keep in a room warm place … use up within a few months
use
- Enjoy pure schnapps or use as a cocktail ingredient … can be used in desserts, marinades or baked goods
tip
- Let the cherry liqueur aroma for another 3-4 months after bottling (let stand)!
