Ingredients for 1 servings:
- 600 g whole wheat flour, freshly ground
- 1 tsp, leveled baking powder
- 180 g hazelnuts
- 220 g honey
- 3 eggs
- 2 pinches of vanilla
- 1 pinch of sea salt
- 250 g butter
- Flour for the work surface

Combine the freshly ground whole wheat flour with the baking powder and ground hazelnuts in a bowl. Make a well and stir in the honey, eggs, vanilla, and sea salt. Cut in the cold butter and quickly knead everything together. Let the dough rest for 1 hour. Roll out small portions on a lightly floured surface, cut out with a bunny shape, and place on the baking sheet. Bake at 190°C (375°F) on the middle rack for approximately 10-15 minutes.
