Liver dumplings

Ingredients for 2 servings:

  • 2 rolls, stale
  • 125 g liver(s) (beef liver)
  • 30 g bacon
  • 1 small onion(s)
  • 1 egg(s)
  • Salt
  • Pepper, white, ad mill
  • marjoram
  • breadcrumbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Soak the rolls in water. Rinse the liver, remove the skin, and mince it along with the bacon, the peeled, finely chopped onion, and the squeezed-out rolls. Add the egg, the spices, and—if the dough isn’t firm enough—some breadcrumbs. With moistened hands, form dumplings. Bring salted water to a boil and add the liver dumplings. Simmer gently for about 15 minutes. TIP: Liver dumplings are especially delicious with sauerkraut or in meat broth.
