Liver spaetzle soup

Ingredients for 4 servings:

  • 1 pack of chicken giblets or chicken wings
  • 300 g chicken liver(s)
  • 1 bunch of soup vegetables
  • 1 cube of chicken stock
  • salt and pepper
  • 1 tsp marjoram
  • 1 egg(s)
  • Breadcrumbs as needed

Bring 1 liter of water to a boil with the chicken giblets, trimmed soup vegetables, and stock cube, skim off the skims, and simmer gently for 40 minutes. Strain and return the clear soup to a boil. Finely puree the chicken liver in a blender. Combine the liver, spices, egg, and breadcrumbs in a thick batter and grate it into the boiling broth using a spaetzle grater. Simmer gently for about 5 minutes, then serve.
