Ingredients for 4 servings:

  • 8 eggs
  • 2 large onions, cut into strips
  • 100 g bacon or belly bacon, diced
  • 4 gherkins and some cucumber juice
  • 5 tbsp sugar
  • 600 ml mustard (for Bautzner mustard this is 3 cups)
  • 600 ml water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mustard eggs, just the way I like them

Place the diced bacon in a pan and fry. Add the onion strips and fry until translucent. Cut the gherkins into small pieces and add them to the pan along with a little of the stock. Now add the sugar and dissolve it. Add the mustard and water to the pan and bring the sauce to a boil. There’s usually enough salt in the bacon that you can omit it, so it’s best to season to taste. When the sauce is boiling, carefully crack the eggs and drop them into the sauce. Cover, and after about 5 minutes the eggs are ready. We always serve it with potatoes.
