Love letters with nut filling

Ingredients for 1 servings:

  • 200 g flour
  • 200 g butter, soft
  • 5 egg yolks
  • 200 g almonds or hazelnuts, ground
  • 150 g powdered sugar
  • 5 egg whites
  • Powdered sugar, for dusting

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 57 minutes

for 40 pieces

Knead flour, butter, and egg yolk into a smooth dough. Form into about 40 equal-sized balls and refrigerate. Beat the chilled egg whites until stiff. Mix the nuts with the sugar and slowly stir in the beaten egg whites. Remove the balls from the refrigerator one at a time and roll them out evenly. Using two teaspoons, place the nut mixture in the center and fold in two sides of the dough. Fold over the corners and press down lightly. Bake at 180°C for about 12 minutes. The love letters should have lightly browned corners. Sprinkle with powdered sugar when serving.
