Ingredients for 2 servings:
- 250 g soybeans, yellow, peeled
- 2 liters of water
- extra water for rinsing and soaking
- 1 pinch(s) of salt or sugar, optional
Instructions
Working time approx. 15 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 45 minutes
Rinse the soybeans and soak for 24 to 36 hours. During the soaking period, rinse the beans twice, and change the soaking water. Blend the beans thoroughly with 500 ml of water in a blender. Transfer the mixture to a very large pot and add 1.5 liters of water. Bring to a boil and simmer gently for 30 minutes. Be careful, it boils over very quickly! Strain the liquid through a cheesecloth and bottle.
