Ingredients for 4 servings:
- Baking spray
- 2 m.-sized onion(s)
- 2 stalks celery
- 2 large carrots
- 2 garlic cloves
- 1 kg minced beef
- 1 tsp, heaped paprika powder
- 1 tsp, heaped mustard powder
- 1 tsp cayenne pepper
- 1 tsp, heaped herbs of Provence
- 5 tbsp Worcestershire sauce
- 4 dashes of Tabasco
- 1 tbsp tomato paste
- 200 ml beef bouillon
- 1 kg potatoes, floury
- 8 spring onions
- 250 g yogurt, Greek, low-fat

Slice the green onions. If you don’t have mustard powder, grind 3 tablespoons of yellow mustard seeds in a mortar and pestle. Finely chop the onions, celery, and carrots. Squeeze the garlic clove. Spray a skillet with cooking spray and heat to high heat. Add the onions, celery, carrots, garlic, and ground beef. Reduce the heat to medium and sauté for about 5 minutes, until the beef is crumbly. Stir in the paprika, mustard powder, cayenne pepper, Herbes de Provence, Worcestershire sauce, Tabasco, tomato paste, and beef bouillon and simmer for about 15 minutes. The mixture should still be moist. Meanwhile, peel the potatoes and boil them in lightly salted water for about 25 minutes, or until tender. Preheat the oven broiler to 500°F (270°C). Spray a small saucepan with cooking spray, add the green onions, and 3 tablespoons of water. Cover and simmer for 3 minutes, or until tender. Drain and set aside. Drain the potatoes and mash them in the pan until smooth. Stir in the spring onions and yogurt. Season with salt and pepper and keep warm. Transfer the meat mixture to an ovenproof casserole dish. Spoon the potato mixture over the meat. If desired, make some decorative ridges with a fork. Place the casserole dish about 15 cm under the grill and bake for about 7 minutes, or until a golden crust has formed. Note: Traditional British stew or pub food. This recipe is medium hot. The heat can be adjusted with the paprika, cayenne pepper, and Tabasco. It also keeps well in the refrigerator or freezes in portions.
