Low-carb almond muffins

Ingredients for 1 servings:

  • 4 eggs
  • ½ tsp salt
  • ½ tsp baking soda
  • 200 g ground almonds
  • 100 g butter, melted
  • e.g. Stevia
  • n. B. Cinnamon powder, approx. 1/2 tsp
  • ½ tsp lemon zest, untreated, grated
  • 1 m.-sized apple
  • 1 pinch of salt
  • 1 tbsp protein powder (vanilla flavor)
  • n. B. milk or almond milk or mineral water, if necessary.

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Stir the egg yolks, salt, baking soda, melted butter, lemon zest, cinnamon, stevia, egg white powder, and ground almonds into a batter. If it’s too thick, add a little liquid, such as milk, almond milk, or mineral water. Fold the egg whites into the batter. Peel and chop an apple or other fruit, and add it to the batter. Pour the batter into baking dishes and bake at 175°C for 20-25 minutes. You can also omit the egg white powder. I drink it after exercise, so I keep it in the house.
