- 280 g almonds, ground
- 70 g psyllium husks, ground
- 1 tsp, leveled salt
- 6 g baking soda
- 4 egg whites
- 55 g vinegar, 5%
- 340 g water

Filling and very healthy
Preheat the oven to 170 degrees Celsius. First, mix all the dry ingredients, except the baking soda, with a mixer. Then add the egg whites, vinegar, and water and mix well. The dough should now swell for at least 20 minutes. Then add the baking soda to the dough and knead it thoroughly again. Either with moistened hands or with the dough hook of a powerful food processor. Place the dough on a baking sheet lined with baking paper and shape it into a loaf. I don’t recommend baking it in a baking pan, as I had a lot of problems with that. Apart from that, it looks better. Bake the bread for 80 minutes and then let it rest for about 20 minutes with the oven turned off and the oven door open. Tip: Anything that doesn’t absorb liquid, such as nuts or seeds, can be added up to a quantity of 150 g, but is not necessary. For example, I use. 50g sunflower seeds 50g roasted sesame seeds 50g pumpkin seeds Or 50g dried tomatoes 50g olives 1 tbsp oregano or 1 tbsp Italian herbs Notes: The psyllium husks are essential for the recipe to succeed and cannot be replaced, let alone omitted. It is best to use ground psyllium husks, which can be bought almost everywhere these days. The almonds must be ground almonds, not almond flour. The almonds do not necessarily have to be blanched. You can also use 2 whole eggs instead of the 4 egg whites, but the bread will then be a little firmer. Apart from that, the taste will be different. If you don’t like baking soda, you can also use 1.5 packets of baking powder. Baking soda copes better with this heavy dough and is to be preferred. If you prefer a more balanced texture, use 140g almonds and 140g egg white powder. This must be high quality, though. Protein powders for shakes aren’t suitable, as they usually contain thickeners (carrageenan, xanthan gum, locust bean gum, guar gum, etc.). A quick look at the ingredients list will help. The bread is relatively high in fiber, so please have something to drink with it.
