Low-fat low-carb bread

Ingredients for 1 servings:

  • 300 g zucchini
  • 200 g carrot(s)
  • 30 g wheat bran
  • 70 g psyllium husks
  • 10 g chia seeds
  • ½ pack of baking powder
  • 20 g protein powder, tasteless
  • 2 egg whites
  • ½ tsp salt
  • 200 g quark

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 10 minutes

Grate the zucchini and carrots very finely. Then be sure to squeeze them thoroughly to remove any excess water. The grated vegetables should be as dry as possible. In a separate bowl, combine the wheat bran, psyllium husks, chia seeds, and baking powder. Mix the quark, egg whites, protein powder, salt, and quark together, then stir in the dry ingredients and the grated vegetables. Pour everything into a loaf pan lined with baking paper and bake at 170°C (convection oven) for approximately 50-60 minutes. It’s best to keep the bread in the refrigerator.
