Ingredients for 2 servings:
- 1 cauliflower
- 1 tbsp coconut oil
- some salt and pepper

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Remove the leaves from the cauliflower, remove the stem, and grate the florets. Now add a tablespoon of coconut oil (you can use another oil, but coconut oil gives the cauliflower rice a nice flavor) to a pan and add the grated cauliflower. Season with salt and pepper. Fry the cauliflower rice in the pan over medium heat for about 10 minutes, stirring occasionally. Serve with chicken gyros or any kind of shredded meat.
