Low-carb cheesecake

Spread the love

Ingredients for 1 servings:

  • 3 tbsp, heaped protein powder vanilla
  • 200 ml almond milk (almond drink) or oat milk
  • 2 eggs
  • 250 g low-fat curd cheese
  • 85 g cream cheese, light
  • 2 tbsp coconut flour
  • 1 tsp vanilla pulp

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

for the air fryer

In a bowl, first mix the dry ingredients together, then mix in the remaining ingredients with a hand mixer. Pour the mixture into a smaller baking pan (approx. 22 x 22 cm) and bake in the air fryer at 150 degrees Celsius for 15 minutes. Alternatively, bake in the oven at 150 degrees Celsius for 40 minutes with fan-assisted air. It’s best to pierce the cake with a wooden skewer after 12 minutes (in the air fryer) or after 35 minutes (in the oven) to check if it’s done. If there’s still batter sticking to the skewer, add a little more baking time. Per serving: approximately 819 kcal
