Low-carb chicken, leek, and tomato pan

Ingredients for 2 servings:

  • 500 g chicken breast fillet(s)
  • 1 bunch of spring onions
  • 300 g tomatoes
  • 35 g Parmesan, grated
  • 1 tsp herbs as desired
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Thaw the chicken breast fillet if frozen. Cut the meat into cubes and fry in a pan with a little oil. Trim the spring onions and slice them into small rings. Wash the tomatoes and dice them. When the chicken starts to brown, add the spring onions and fry. Then add the tomatoes and fry them for a bit. Season with salt and pepper and add the herbs and Parmesan cheese.
