Low-carb curry leek with pollock

Ingredients for 4 servings:

  • 500 g pollock fillet(s) or cod or haddock
  • 500 g leek
  • 200 ml cream
  • 200 g cheese, grated
  • 50 ml milk
  • 2 tsp curry, or more if you like!
  • some salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

or with cod or haddock

Clean the leek, cut into rings, and steam for about 5 minutes. In the meantime, rinse and dry the fish. Mix the cream with the milk, cheese, and spices. Pour a layer of the cream and cheese mixture into the casserole dish (saves greasing) and then add a layer of leeks. Add another layer of the cream and cheese mixture over the top, then nestle the fish fillets into the vegetables. Add the cream and cheese mixture. Depending on the size of the fillets, cook at 180°C for about 20 minutes, then increase the temperature to 200°C to brown the cheese slightly. Each serving contains about 8 carbs and 530 kcal. You can reduce the weight by using light versions of the cream and cheese. This will increase the carb content slightly, but also reduce the flavor.
