Low-Carb Peanut Butter Cookies

Ingredients for 1 servings:

  • 100 g peanut butter
  • 2 m.-sized eggs
  • 70 g almond flour or ground almonds
  • 30 g hazelnuts, ground
  • 70 g xylitol (sugar substitute)
  • 1 tsp baking powder

Preheat the oven to 160°C (320°F) using conventional heat. Mix the peanut butter with the eggs and Xucker. Combine the almond flour, ground hazelnuts, and baking powder and add to the peanut butter mixture. Mix everything well. Line a baking sheet with parchment paper and drop the dough onto it in heaps. It’s best to flatten the heaps with your fingertips. Bake the cookies for about 20 minutes. Let the cookies cool. The cookies will only fully harden upon cooling, so don’t be surprised. Tip: You can use other ground nuts instead of almonds and hazelnuts. You can also use just one type.
