  • 260 g almond butter, brown butter or peanut butter without sugar or additives
  • 112 g xylitol (sugar substitute)

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Preheat the oven to 175°C (350°F) top/bottom heat. Finely grind the birch sugar until it resembles powdered sugar. Mix the almond butter (brown is more flavorful, white is milder), or peanut butter (no added sugar for low-carb), with the ground birch sugar and the egg until smooth. Form small balls, place them on a baking sheet lined with parchment paper, and flatten each one slightly with a fork. Bake on the middle rack of the oven for about 15 minutes, or a little longer depending on your oven. The cookies will be very soft and nutty.
