Low-carb rolls

Ingredients for 6 servings:

  • 250 g quark, 20% fat
  • 50 g spelt flakes
  • 50 g flaxseed flour
  • 2 eggs
  • 2 tbsp psyllium husks
  • 2 tbsp chia seeds
  • 1 tsp, heaped cream of tartar baking powder
  • 1 tsp, leveled salt
  • 1 tsp bread spice mix to taste
  • 1 tbsp flaxseed
  • Optionally, seeds for sprinkling, e.g. sesame, black cumin, sunflower or pumpkin seeds, oat flakes, etc.

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Makes 6 small rolls, and I find them very similar in texture and taste to regular rolls. Bonus: they smell delicious!

Mix all ingredients together by hand or with a dough mixer. Cover with a cloth and let the dough rest for half an hour. Then divide into six portions and form rolls, placing them on a baking sheet lined with baking paper. Sprinkle with sesame seeds, sunflower seeds, pumpkin seeds, oatmeal, or black cumin seeds, if desired, and press down lightly. Then place in the oven preheated to 180°C (top/bottom heat). Bake the rolls for about 30 minutes.
