A low-carb salad is perfect for dinner or as a small meal in between. You have a wide variety of vegetables and other ingredients because most vegetables are low in carbohydrates.
Low carb salad: protein bomb
The carbohydrates are not hidden in the salads themselves, but often in the dressings. But you can turn almost any salad into a low-carb salad by cutting out sugar or ready-made dressings with lots of preservatives.
- For the “protein bomb” salad you need 250 grams of broccoli, an avocado, three eggs, and 250 grams of goat’s quark.
- As a dressing, you can use olive oil, salt, pepper, and herbs. Depending on your taste, you can add a little lemon juice to the dressing. Almond or pumpkin seeds polish up the taste of the salad.
- Cut the broccoli into bite-sized pieces. You can either steep the broccoli in cold water for about ten minutes or steam it. Many vitamins are lost when cooking. Steaming or steeping in ice water is therefore recommended.
- Now halve the avocado and dice it. The same happens with the goat curd. Place the avocado in a bowl with the washed and chopped herbs and the goat cheese and add the dressing. Chives, dill, or parsley are great chopped herbs for this recipe.
- Poach the three eggs. To do this, beat them up in a cup and add them one after the other to lightly boiling salted water. Finally, remove the eggs from the pan with a slotted spoon. Add the eggs and broccoli pieces to the bowl with the rest of the salad. Mix all ingredients together, season and pepper. Enjoy your meal!
Beetroot salad
For this healthy beetroot salad, you need 200 grams of beetroot, 150 grams of lettuce and 150 grams of blue cheese or goat cheese, and an avocado. The dressing consists of salt, pepper, oil, honey, and apple cider vinegar.
- Wash and trim the beets. However, the beetroot stains strongly. A tip here is to wear disposable gloves so that your hands do not turn purple later. You can now either cut the cleaned beetroot into bite-sized cubes or cut them into spirals with a spiralizer.
- The salad is also washed. Then drain well or use a salad spinner to dry faster. Put the beetroot and lettuce together in a bowl. Season with a little salt and, if necessary, pepper. Then halve and deseed the avocado. It too ends up diced in the salad bowl.
- For the dressing, mix 4 tbsp apple cider vinegar, 6 tbsp oil, and 1 tsp honey. Refine the salad with the dressing. Now all that’s missing is the diced cheese. Spread the cheese cubes on the salad and serve – bon appetit!
Classic low-carb salad – vegan
For the classic variant of the low-carb salad, you need half a cucumber, two tomatoes, an onion, lettuce of your choice, and herbs, salt, and oil.
- Wash and slice the cucumber. The tomatoes are also washed and diced, as is a peeled onion.
- Wash the lettuce thoroughly and drain well. A salad spinner can be helpful to help the lettuce drain faster.
- Tear the lettuce leaves into bite-sized pieces and place all the ingredients in a salad bowl.
- The salad is now only refined with salt, herbs, and oil. Salt to taste and add a little oil. Mix all the salad mix together. Dill or parsley are suitable as herbs. If desired and tasted, this salad can also be refined with cheese. Alternatively, you can roast and add sunflower seeds.
