Low-carb Valentine's Day heart-shaped waffle breakfast

Ingredients for 1 servings:

  • 65 g almond(s), blanched, ground
  • 2 eggs
  • 20 g xylitol (sugar substitute) or erythritol
  • ½ tsp baking powder
  • some butter or oil for greasing
  • 8 tsp strawberry fruit spread, sugar-free
  • 4 tsp hazelnut spread, sugar-free
  • 2 tsp xylitol (sugar substitute), ground (like powdered sugar)

Instructions

Working time approx. 8 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 12 minutes

for 2 low carb waffles

Preheat the waffle iron. Meanwhile, combine the first four ingredients in a tall bowl and blend with a hand blender. Once the waffle iron is hot, grease it and pour in the batter in portions. Bake two waffles until golden brown. For the waffle tower, cut individual hearts out of the waffles as shown in the picture. Spread four hearts with a teaspoon of low-carb fruit spread each and stack five hearts on top of each other. Gently warm the nougat spread, if desired, and spread it over the tower as a sauce. Sprinkle the powdered xylitol on top as well.
