Ingredients for 4 servings:

- 1 leek(s)
- 2 carrots
- 1 zucchini
- 125 g diced ham
- 50 g Gouda, grated
- 4 eggs
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika powder
- 1 tsp herbs de Provence
- Olive oil for the mold
Instructions
Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
Dice the onion and thinly slice the leek. Grate the remaining vegetables. Place the vegetables in a bowl along with the cheese and diced ham. Preheat the oven to 180°C. Brush a round springform pan or a small rectangular baking dish with olive oil. Whisk the eggs with the spices and then mix with the vegetables. Pour the egg and vegetable mixture into the dish. Bake for about 30 minutes, until the top is lightly browned. Remove from the oven and let rest briefly. Loosen the edges with a knife and serve the quiche while still warm.
