Ingredients for 2 servings:
- 2 beef roulades
- 2 tsp mustard
- 2 onions
- 100 g gherkins
- 60 g lean ham (salmon ham)
- 1 tbsp margarine (half-fat margarine)
- 20 g tomato paste
- 125 ml instant meat broth
- 1 carrot(s)
- 1 piece(s) celeriac
- n. B. Sauce thickener
- salt and pepper

Finely chop the carrot and celery, then dice the onions, cucumbers, and salmon ham. Season the meat slices with salt and pepper, spread with mustard, and top with 2/3 of the diced onions and cucumbers, as well as the entire salmon ham. Roll up the meat slices and tie them together with kitchen string or roulade pins. Heat the margarine in a pressure cooker and fry the remaining diced onions. Add the tomato paste and fry. When it starts to stick to the bottom of the pot, deglaze with a little water. Repeat this process until a dark sauce has formed. Pour in the meat broth and add the roulades to the boiling sauce without frying. Add the root vegetables and the remaining cucumbers. Close the pressure cooker. Cook the meat for about 20 minutes (valve 2nd ring). Remove the roulades and keep warm. Purée the sauce with a food processor, season to taste, and thicken with a sauce thickener if desired. Serve with dumplings or tagliatelle and salad. Tip: You can also use 10g of flour and 50ml of red wine to thicken the dish. LowFat30: 8g fat, 23% fat calories, 11g carbohydrates per serving.
