Low-fat waffles

Ingredients for 1 servings:

  • 120 g wheat flour
  • 20 g cornstarch
  • 60 g sugar
  • 1 tsp sweetener, liquid, maybe a little more
  • 6 tbsp milk, 1.5% fat
  • 1 packet of vanilla sugar
  • ½ tsp baking powder
  • 65 g margarine (half-fat margarine)
  • 4 eggs
  • 1 pinch of salt
  • possibly rum flavoring or lemon, bitter almond, or butter vanilla flavoring
  • Butter for the waffle iron

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

makes about 8 pieces

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Beat the margarine with the sugar, vanilla sugar, and sweetener until creamy. Gradually beat in the eggs. If desired, stir a few drops of flavoring into the egg custard. Mix the flour with the cornstarch and baking powder and stir into the custard alternately with the milk. Fold in the beaten egg whites. This should form a thick, fluffy batter. Heat a waffle iron and grease it with a little butter. Pour about 1 ladleful of batter into the waffle iron for each waffle.
