Ingredients for 1 servings:

  • 200 g flour
  • 75 g powdered sugar
  • 1 packet of vanilla sugar
  • 1 egg yolk
  • 125 g butter
  • some oil if needed
  • 1 egg white
  • 150 g powdered sugar
  • 6 drops of lemon juice
  • Food coloring, red
  • Sugar pearls

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes

Mix the first five ingredients into a smooth dough. If the dough is too crumbly (depending on the size of the egg yolk), add a little more oil. Wrap the finished dough in cling film and chill for at least an hour. Then roll out the dough on a floured surface and cut out biscuits using a mushroom cutter. Bake the biscuits in a preheated oven (180°C fan/convection oven) for about 10 minutes until golden brown. Once cooled, mix the egg whites, powdered sugar, and lemon juice with the dough hook on a mixer on low speed for 10 minutes, finally adding 2-3 drops of red food coloring. Spread this icing on the mushroom caps. Decorate quickly with sugar pearls before the icing sets. This recipe yields slightly more than one tray of biscuits.
