Ingredients for 5 servings:

  • 500g spaghetti
  • 1 bell pepper(s), red, diced
  • 2 tomatoes, diced
  • 4 spring onions, in rings
  • 2 garlic cloves, chopped
  • 5 tbsp balsamic vinegar
  • 10 tbsp olive oil
  • herbal salt
  • some black olives, pitted, sliced
  • some paprika powder, hot
  • pepper
  • n. B. herbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the spaghetti al dente. Rinse with cold water and drain well in a colander. In the meantime, mix the vinegar, oil, salt, pepper, herbs, and garlic to make a vinaigrette (this works best in a screw-top jar). Pour the vinaigrette into a bowl. Add the pasta, vegetables, and olives. Mix well and let stand for 10-15 minutes. Sprinkle with the hot paprika. Feta cheese would probably also be delicious in this salad, but unfortunately we didn’t have any. It was just a quickie, using what we had!
