Lukewarm Mediterranean bread salad

Ingredients for 3 servings:

  • 1 m.-large zucchini, quartered
  • 1 medium-sized eggplant(s), diced
  • 15 cherry tomatoes, quartered depending on size
  • 100 g bacon cubes
  • 1 small onion(s), chopped
  • e.g. salt and pepper
  • a little parsley
  • 4 slices of bread (at least 1 day old)
  • e.g. apple cider vinegar
  • e.g. olive oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Sauté the zucchini, eggplant, and onions in olive oil until slightly tender, then season with salt and pepper. Also fry the bacon. Dice the bread and fry in oil until crispy. Place the roasted vegetables and cherry tomatoes in a bowl. Then add the fried bacon. Toss everything with apple cider vinegar and a little olive oil to taste, and season with salt and pepper if desired. Sprinkle the bread cubes over the salad. Garnish with parsley.
