Lukewarm pasta salad

Ingredients for 4 servings:

  • 250 g cherry tomatoes
  • 250g mozzarella
  • 1 bunch of basil
  • 400 g pasta, short (e.g. penne)
  • Salt
  • 2 tbsp Balsamic vinegar, bianco
  • 4 tbsp olive oil
  • Pepper, freshly ground
  • 1 tbsp pesto (ready-made product)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the pasta in salted water according to the package instructions until almost tender. Drain, and let cool slightly. Rinse and halve the cherry tomatoes. Drain the mozzarella and cut into small cubes. Mix a marinade of balsamic vinegar, olive oil, salt, pepper, and sugar, pour over the still-warm pasta, and let it marinate for 30 minutes. Rinse the basil and shake dry. Then pick off the leaves and roughly chop them. Stir the basil, tomatoes, and mozzarella into the pasta, seasoning again with salt and pepper, if desired, and a little pesto. Serve lukewarm. Grilled meat or fish go well with this.
