Pasta salad with arugula, feta cheese and dried tomatoes

Ingredients for 8 servings:

  • 500g penne
  • 5 tbsp olive oil
  • 5 tbsp oil (sunflower oil)
  • 3 cloves garlic
  • 1 jar tomato(s), dried, pickled in oil
  • 2 packs of feta cheese
  • 1 pack of arugula

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta according to the package instructions until al dente. Drain and let cool. Combine the olive and sunflower oils. Peel and press the garlic cloves into the mixture. Cut the tomatoes into small strips and dice the feta cheese. Wash the arugula and remove the stems. Toss the pasta with the tomatoes, feta cheese, and arugula. Roughly remove the garlic from the oil and then mix the oil into the salad. Tastes wonderful as a salad for grilling.
