Lukewarm rice salad

Ingredients for 2 servings:

  • 125 g rice
  • Paprika powder (rose paprika)
  • 1 tsp mustard, medium hot
  • 1 small can of peas
  • 1 zucchini
  • 1 carrot(s)
  • 1 can of tuna (in its own juice)
  • Oil (safflower oil or sunflower oil)
  • Vinegar, clear
  • Mozzarella or feta cheese to taste
  • 3 gherkins
  • 1 tbsp parsley
  • 1 tbsp chives
  • Salt and pepper, to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the rice as usual. Meanwhile, cut the mozzarella or feta cheese into small cubes, along with the gherkins and zucchini. Drain the tuna well and shred it. Grate the carrot, add everything to a bowl along with the peas, parsley, chives, and mustard, and season with salt, pepper, and paprika to taste. Add oil until smooth and season with vinegar. Fold in the still-warm rice.
