Ingredients for 1 servings:

  • 350 g butter, soft
  • 300 g sugar
  • 6 eggs
  • 350 g flour
  • 2 lemon(s), the peel
  • 2 packets of vanilla sugar
  • 1 packet of baking powder
  • 250 g mascarpone
  • 150 g natural yogurt
  • 200 ml cream
  • 150 g sugar
  • 2 packets of vanilla sugar
  • 1 packet of vanilla pudding powder
  • 500 ml milk
  • some chocolate for decoration, to taste

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

For the base, mix all ingredients except the flour and baking powder together and beat until smooth. Mix the flour and baking powder together and fold in. Pour the batter onto a baking sheet lined with baking paper and bake for 20 minutes at 185 degrees Celsius. Let the base cool while you make the cream. For the cream, mix the mascarpone, yogurt, 100g sugar and the vanilla sugar. Whip the cream until stiff and fold in. Make a pudding from the pudding mix, milk and the remaining sugar. Let the pudding cool and then fold into the mascarpone and yogurt cream. Chill the mixture for 20 minutes. Spread the cream evenly over the base. If desired and to taste, melt a little chocolate and spread it on the Lyksborg wave.
