Ingredients for 3 servings:

  • 300 g meat sausage (Lyoner), in a ring
  • 3 jacket potatoes
  • 4 eggs
  • 1 large onion(s) , large
  • 1 bunch of chives
  • 1 pinch(s) of salt and pepper
  • 1 tbsp lard

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Saarland pan dish

Skin the Lyoner sausage and cut into 1 cm thick slices. Fry the Lyoner slices in a non-stick pan until crispy on both sides, then remove from the pan and keep warm. Dice the onion and fry in the pan with lard, then slice the jacket potatoes and add them. Season well with salt and pepper and brown until nicely browned. Meanwhile, lightly salt and pepper the eggs and beat them. Pour the egg mixture over the fried potatoes, arrange the Lyoner slices on top, and sprinkle with plenty of chopped chives. Now put the lid on the pan and let it set on low heat.
