Ingredients for 4 servings:
- 700 g potatoes
- 500 g Leberkäse
- 3 tbsp oil
- 1 bunch of parsley
- 8 eggs
- salt and pepper
- Caraway, ground
- Paprika powder
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Wash the potatoes, cook for 25-30 minutes, rinse, and peel once cooled. Dice the potatoes and Leberkäse (meatloaf). Fry the potatoes in 2 tablespoons of oil and season to taste. Add the Leberkäse cubes. Wash and finely chop the parsley. Sprinkle over the Leberkäse potatoes. Serve with two fried eggs per person.
