Ingredients for 4 servings:

  • 500 g pasta (macaroni, short)
  • 1 cup of cream
  • 3 tbsp butter
  • 400 g cheese (Cheddar, matured for 16 months)
  • 150 g cheese (Gruyère)
  • 1 pack of processed cheese or sliced ​​cheese
  • 1 tbsp flour
  • 1 tsp paprika powder
  • 1 tsp nutmeg
  • 1 tsp cayenne pepper
  • 2 tsp mustard
  • 1 splash of milk, if necessary
  • Salt

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Macaroni baked in cheese sauce

Grate the Cheddar and Gruyère into separate bowls. At the same time, you can cook the macaroni according to the package instructions. Preheat the oven to 180°C (fan oven). Put the butter in a saucepan and melt it. As soon as the butter starts to foam slightly, add the spoonful of flour and whisk. Now add the cayenne pepper, paprika, nutmeg and mustard and whisk to combine. Make sure the heat is not too high. Stir in the cup of cream and 2/3 of the grated Cheddar. Stir until everything forms a creamy mixture, adding a good splash of milk if necessary. Now add the melted or sliced ​​cheese and keep stirring. If the sauce becomes too thick, simply add a little milk. Add the pasta to the sauce and mix well. Now transfer the whole thing to a baking dish and sprinkle with the remaining Cheddar and Gruyère. Place the dish in the oven for about 15 minutes. For a golden brown crust, simply turn on the broiler for the last 5 minutes.
