Macadamia-Cranberry Cookies

Ingredients for 30 servings:

  • 125 g nuts (macadamia)
  • 150 g butter / margarine, soft
  • 50 g sugar
  • 75 g brown sugar
  • 1 tbsp vanilla sugar (bourbon)
  • 1 egg(s)
  • 80 g dried cranberries (e.g. from Seeberger)
  • 200 g flour
  • ½ tsp baking powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the nuts on a tea towel and rub off the salt. Roughly chop. Whisk the fat, sugar, brown sugar, and vanilla sugar until fluffy. Stir in the egg. Mix the flour and baking powder and stir in. Stir in the nuts and cranberries with a wooden spoon. Using 2 teaspoons, place about 30 mounds of dough onto baking sheets lined with baking paper and flatten slightly. Bake in a preheated oven (electric oven: 175°C/fan: 150°C) for about 15-20 minutes.
