Ingredients for 1 servings:

  • 100 g oat flakes
  • 140 g date(s) (Medjool dates), pitted
  • 1 tbsp almond butter
  • 60 ml water
  • 1 pinch of salt
  • ½ tsp vanilla powder
  • 50 g puffed amaranth, more if desired
  • 60 g macadamia nuts

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Place the oats and pitted dates in a high-powered food processor with the almond butter, water, salt, and vanilla and blend until very finely chopped. Add the puffed amaranth and nuts and blend briefly again to ensure the nuts are only coarsely chopped. Start with only 50g of amaranth and adjust the amount if necessary until the mixture is manageable. Line a small baking sheet with baking paper and spread the mixture evenly. Place the sheet in the freezer for about 1 hour. Then cut the sheet into bars with a sharp knife. The bars can be stored in the refrigerator for 1 week. Alternatively, they can be kept in the freezer for several weeks.
