Ingredients for 8 servings:

  • 200 g brown rice, medium grain, ground
  • 50 g sunflower seeds, ground
  • ½ tsp coriander, ground
  • ½ tsp mustard seeds, ground
  • ½ tsp cane sugar
  • ½ tsp salt
  • 400 ml mineral water, carbonated
  • Oil (rapeseed oil)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Grind everything from rice to mustard seeds, mix in the salt and sugar, then add the carbonated mineral water and mix well. Let it rest for 30 minutes. Drop the batter, one ladle at a time, into a hot waffle iron that has been lightly coated with rapeseed oil. One waffle took me 7 minutes to cook. Note: It’s a great substitute for bread. It can also be added to sweet dishes, perhaps with whole cane sugar and bourbon vanilla sugar, or savory. Toppings are also easy to add.
