Ingredients for 2 servings:
- 2 kohlrabi
- 3 eggs
- 1 onion(s)
- 8 small gherkins
- 8 radishes
- 4 tbsp cucumber water
- 125 g salad cream (Miracel Whip)
- 1 apple, optional
- salt and pepper
Instructions
Working time approx. 35 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 45 minutes
with kohlrabi instead of potatoes
Cut the kohlrabi into bite-sized pieces and cook until the desired consistency is reached. 5-10 minutes is a good guideline. Hard-boil the eggs. Let the kohlrabi and eggs cool. Finely chop the onion, gherkins, and radishes. Place all ingredients in a bowl, mix with about 4 tablespoons of cucumber water and the salad cream, and season with salt and pepper. Chill in the refrigerator and serve at room temperature. For a non-low-carb version, chop an apple and add it. Note: Some sauce will collect at the bottom; this is unavoidable. Sausages go well with this dish.
