Macaroni alla amatriciana

Ingredients for 4 servings:

  • 100 g onion(s), finely diced
  • 100 g ham, pancetta in slices, finely diced, alternatively bacon
  • 2 tbsp olive oil
  • 10 g butter
  • 700 g tomatoes, chopped
  • Salt
  • 500 g pasta, maccheroni corti
  • Pepper, black, ad M.
  • Pepperoncini
  • 100 g cheese, Pecorino, coarsely grated
  • 12 basil leaves

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat olive oil and butter in a pan. Sauté the onions and pancetta. Add the tomatoes and simmer over medium heat for 8 to 10 minutes until reduced to a puree. Season with salt and chili peppers. Meanwhile, cook the macaroni in plenty of boiling salted water until al dente, drain well, and set aside. Mix with the tomato sauce, season generously with pepper, and toss with half of the pecorino. Serve in deep plates and sprinkle with the remaining pecorino and basil leaves to serve.
