Ingredients for 4 servings:

  • 250 g pasta (macaroni)
  • 55 g butter
  • 55 g flour
  • 600 ml milk
  • ½ tsp nutmeg, grated
  • 100 g Parmesan, grated
  • 150 g Cheddar cheese, grated
  • 200 g spinach
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Macaroni and cheese with spinach

First, prepare the pasta according to the package instructions. Meanwhile, season the milk with nutmeg and heat it gently, but do not boil it. Melt the butter in a saucepan over low heat and stir in the flour. Bring to a simmer, then add the milk a little at a time, stirring constantly. Simmer until the sauce thickens. Then add the Cheddar cheese and three-quarters of the Parmesan cheese, stirring constantly until the cheese has melted. Shred the spinach and add it to the sauce. Season with salt and pepper. Mix the sauce with the drained pasta, pour it into a baking dish, and sprinkle with the remaining Parmesan cheese. Place the dish under the broiler (highest setting) and wait until the cheese has melted and turned lightly brown.
