Ingredients for 4 servings:
- 450 g leaf spinach (frozen)
- some salt and pepper from the mill
- 2 tbsp olive oil
- 2 garlic cloves
- some nutmeg
- 500 g pasta (macaroni)
- salt water
- 50 g raisins
- 1 tbsp butter
- 150 g ricotta
- e.g. pine nuts or almonds
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Bring plenty of water to a boil, add salt, and cook the macaroni according to the package instructions until al dente. Meanwhile, heat the oil in a saucepan and briefly sauté the chopped spinach. Peel and mince the garlic, season with salt, pepper, and nutmeg. Stir the raisins into the spinach and sauté briefly. Roast the pine nuts (or almonds) in a dry pan until golden brown. Drain the macaroni in a sieve and let it drain. In a preheated bowl, mix with 1 tablespoon of butter and the spinach. Sprinkle with the pine nuts and the coarsely chopped ricotta, and mix well again. Tip: If you prefer a more intense flavor, use 1 package of feta cheese and sliced almonds instead of ricotta.
