Mackerel in tomato sauce

Ingredients for 5 servings:

  • 5 mackerel(s), ready to cook
  • 5 tomatoes, ripe
  • 1 large onion(s)
  • 4 clove(s) garlic, chopped
  • 100 ml tomato(s), pureed
  • 3 tbsp Tabasco
  • 1 bay leaf
  • 1 bunch parsley, finely chopped
  • salt and pepper
  • 8 tbsp oil, for bearding

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat 4 tablespoons of oil in a pan and fry the mackerel. In a second pan, heat the remaining oil and fry the chopped onion and garlic. Chop the tomatoes and add them along with the passata, Tabasco, and bay leaf. After another 10 minutes, add the chopped parsley. Simmer for another 10 minutes. Season with salt and pepper. Place the fried mackerel in a casserole dish, pour over the tomato sauce, and bake in the oven at 200°C for about 20 minutes. Serve with boiled potatoes.
