Madeira – Cherry Sauce

Ingredients
 

  • 1 glass Cherries Morello cherries
  • 2 tbsp Food starch
  • 1 tbsp Bourbon vanilla sugar
  • 3 tbsp Madeira wine
  • 1 tbsp Fresh blood orange juice
  • 1 pinch Salt

  • This cherry sauce is also suitable for children because the alcohol evaporates during cooking.

Manufacturing:

  • Drain the cherries in a colander. Squeeze the blood orange and mix with 1 cup of cherry juice, cornstarch, vanilla sugar, Madeira and the salt.
  • Heat the remaining cherry juice in a saucepan. Now add the previously prepared liquid while stirring and bring to the boil briefly (approx. 1 min.). Now fold in the cherries and heat again (do not boil any more!).

TIP 😉

  • This delicious own creation goes very well with Kaiserschmarrn (see my cookbook), waffles, (vanilla) ice cream, meat or pure. Warm or cold, whichever tastes best.

Decoration:

  • In the picture I decorated the bound cherry sauce with a 1/2 slice of blood orange and white chocolate.
