Madeira – Cherry Sauce
The perfect madeira – cherry sauce recipe with a picture and simple step-by-step instructions.
- 1 glass Cherries Morello cherries
- 2 tbsp Food starch
- 1 tbsp Bourbon vanilla sugar
- 3 tbsp Madeira wine
- 1 tbsp Fresh blood orange juice
- 1 pinch Salt

- This cherry sauce is also suitable for children because the alcohol evaporates during cooking.
Manufacturing:
- Drain the cherries in a colander. Squeeze the blood orange and mix with 1 cup of cherry juice, cornstarch, vanilla sugar, Madeira and the salt.
- Heat the remaining cherry juice in a saucepan. Now add the previously prepared liquid while stirring and bring to the boil briefly (approx. 1 min.). Now fold in the cherries and heat again (do not boil any more!).
TIP 😉
- This delicious own creation goes very well with Kaiserschmarrn (see my cookbook), waffles, (vanilla) ice cream, meat or pure. Warm or cold, whichever tastes best.
Decoration:
- In the picture I decorated the bound cherry sauce with a 1/2 slice of blood orange and white chocolate.
