Ingredients for 1 servings:

  • 250 g butter
  • 250 g sugar
  • 2 eggs or alternatively 3 egg yolks
  • 1 lemon(s), grated peel
  • 500 g flour
  • 1 egg(s) for brushing
  • a little oil for brushing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

a Swiss cookie specialty

Cream the butter and sugar until fluffy. Beat in the two eggs or the three egg yolks, one after the other, and then add the lemon zest. Add the flour and knead briefly. Chill the dough for half an hour. Roll out the dough on a lightly floured surface to a thickness of 1 cm and cut out shapes using various cutters. Place the cookies on baking paper. Beat the egg with a little oil and brush the cookies with it. Bake in a preheated oven at 180°C for 12-15 minutes. Tip: Three egg yolks can be used if another recipe calls for only egg whites, such as cinnamon stars or Basler Brunsli (recipes in my profile).
