Majons spaghetti salad

Ingredients for 4 servings:

  • 500g spaghetti
  • 1 bowl of tomatoes (cocktail tomatoes, 500 g)
  • 15 basil leaves
  • 5 tbsp tomato paste
  • 3 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 1 tsp mustard
  • n.e. Paprika powder, rose hot
  • Salt
  • pepper
  • Sugar
  • e.g. Parmesan, grated

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Cook the pasta according to the package instructions until al dente. In the meantime, mix the tomato paste with the balsamic vinegar, olive oil, mustard, and seasoning. Drain the cooked pasta, add it to the dressing while still warm, and mix well. Let the whole thing cool, stirring occasionally. Once the pasta has cooled somewhat, wash the cherry tomatoes, cut them into eighths, and finely chop the basil. Add everything to the pasta in the bowl and mix everything together. Sprinkle with grated Parmesan cheese before serving. Tip: I always like to let the pasta sit for at least 12 hours before eating.
