Mediterranean fish pan

Ingredients for 4 servings:

  • 1 onion(s), chopped
  • 2 garlic cloves, crushed
  • 1 zucchini, diced
  • 1 bell pepper(s), red, diced
  • 1 bell pepper(s), yellow, diced
  • 3 plum tomatoes, diced
  • 1 tbsp tomato paste
  • 4 fish fillets (pollock, redfish or cod)
  • 1 shot of red wine
  • 150 ml broth
  • salt and pepper
  • Thyme
  • e.g. olive oil
  • lemon juice
  • 1 cup sour cream or sour cream

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Heat olive oil in a large pan or roasting pan. Sauté the onion until translucent. Add the garlic, zucchini, and bell pepper and saute. Add the tomatoes, then pour in the broth and red wine. Thicken with tomato paste. Season with salt, pepper, and thyme to taste. Season the fish fillets with pepper and salt and drizzle with lemon juice. Then place them on top of the vegetables and spread with sour cream. Cover the fish pan and cook over medium heat for about 10 minutes – the cooking time depends on the size of the fillets. Serve immediately.
