Make Ice Cream Yourself: How to Do It Without An Ice Cream Maker

In summer temperatures, fruity ice cream tastes particularly good and brings a welcome cooling down. Best of all, you don’t even have to go to the ice cream parlor or supermarket, you can simply make ice cream yourself – even without an ice cream maker.

  • If you want to be sure that there are no unwanted additives, colorings, or simply too much sugar in your favorite ice cream, you can simply make ice cream yourself.
  • You don’t need an ice cream maker – just a little stirring and patience.

Strawberry, vanilla, chocolate – every child knows the classic ice cream flavors. In the meantime, of course, every ice cream parlor also has a large selection of exotic types of ice cream such as mango or pineapple, as well as new creations that sometimes take some getting used to, such as beer or mustard ice cream.

Make your own ice cream – even without an ice cream maker

Unfortunately, just because ice cream parlors sometimes cheat doesn’t mean that every ice cream from the supermarket freezer would be recommended: In our ice cream tests over the past few years, we have repeatedly found cheap ingredients and artificial additives in ready-made ice cream.

If you don’t have a good ice cream parlor nearby, want to save yourself the trip to the supermarket or just want to know exactly what ingredients are in your ice cream, you can simply make ice cream yourself. You don’t need an ice cream maker for this – just a little patience. We have three delicious recipe suggestions for milk ice cream, fruit ice cream and sorbet for you.

Homemade chocolate ice cream: ingredients and preparation

Children and adults love to eat chocolate ice cream: After vanilla, chocolate is the second favorite type of ice cream in Germany. For four large scoops of ice cream you will need:

  • 100 ml whole milk
  • 50 g dark chocolate (70% cocoa content)
  • 50 g chocolate (whole milk)
  • 200 grams of cream
  • 1 tsp powdered sugar

If you want to make a more dark chocolate ice cream, use more dark chocolate. However, the ice cream then tastes less sweet. In the interests of the environment and human rights, we recommend using fair trade chocolate, organic milk, and organic cream.

Preparation:

  1. Heat the milk in a saucepan and melt the chocolate in it.
  2. Let the chocolate milk cool down.
  3. Whip the cream with the icing sugar until stiff and mix with the cooled milk.
  4. Put the mass in the freezer and after about half an hour check whether it starts to freeze. As soon as ice crystals form, stir the mixture vigorously and put it back in the cold.
  5. Repeat every half hour, about three times.

After about two hours, the chocolate ice cream should be ready, if it is still too soft, cool it again.

Another great recipe idea: make your own yoghurt ice cream

Strawberry, raspberry, or blackberry: make your own fruit ice cream
You can also make fruit ice cream yourself with a little time – and decide individually which type of fruit you want in the ice cream.

Ingredients:

  • 150 g strawberries, raspberries or blackberries (delicious variation: mix the fruits!)
  • 70 g fine sugar or powdered sugar
  • 125 ml whole milk
  • 50 ml sweet cream
  • 2 tbsp lemon juice

How to prepare the fruit ice cream:

  1. Place the berries in a bowl with the sugar and puree.
  2. Add the milk and lemon juice to the fruit puree and stir.
  3. Whip the cream until stiff and mix into the mixture.
  4. Place the fruit ice cream in the freezer and check, as with chocolate ice cream, when the mass freezes. When the first ice crystals form, stir the mixture well and chill again.
  5. Repeat the stirring about three times every half hour.

Make your own vegan fruit sorbet

If you prefer your ice cream without milk and cream – i.e. vegan and with fewer calories – our fruit sorbet recipe is the right choice for you.

Ingredients for about six servings:

  • 500 g berries of your choice, for example, raspberries or strawberries
  • 100ml of water
  • 160 g sugar (less sugar if you don’t need it that sweet)
  • Zest and juice of half an unwaxed organic lemon

That’s how it’s done:

  1. Grate the zest of the lemon and squeeze out the juice.
  2. Place the raspberries in a blender along with the lemon zest and juice, water and sugar, and blend until smooth.
  3. Fill the sorbet into a flat mold and put it in the freezer.
  4. After about 90 minutes, the mass is semi-solid and can already be enjoyed as a sorbet.
