Make Vegetarian Meatballs Yourself – That’s How it Works

Vegetarian meatballs are a good alternative to the meat version. With a few vegetables and rice, you can prepare the meatballs in a short time. In the following recipe, we will explain exactly how to do this.

Easy recipe for vegetarian meatballs

Vegetarian meatballs are a tasty substitute for the meat variety. With rice and lots of vegetables, you can conjure up a healthy dish here.

  • For four meatballs you need two carrots and two medium-sized onions, two organic eggs, 150 grams of grated Emmental, and 150 grams of rice.
  • You will also need 1 liter of vegetable broth, 3 tablespoons of mixed frozen herbs, 1 teaspoon of clarified butter, and breadcrumbs.
  • First, peel and grate the carrots. Finely dice the onions and place them in a bowl with the grated carrots and Emmental cheese.
  • Meanwhile, bring the vegetable broth to a boil. To do this, add the rice. After about 15 minutes it is cooked. Then drain off the excess water and let the rice cool down.
  • Once this is cold, mix the rice with the vegetables. Now add the organic eggs and mix everything. Season the entire mixture well with the herbs, salt, and pepper.
  • Gradually mix in the breadcrumbs. In the end, the whole thing should give an even mixture. You have to let them rest for a quarter of an hour.
  • Then form the meatballs from the mass and roll them in the remaining breadcrumbs.
  • Finally, fry the meatballs in the pan until golden brown. Heat them up in advance with the clarified butter. Drain the meatballs on kitchen paper before serving.

Variants of the vegetable patty

The preparation of meatballs can be varied as desired.

  • Add vegetables to the base mix if desired. It is important that you grate or dice this finely so that the final mass does not crumble.
  • For example, you can also use broccoli instead of rice for the basis of the meatballs.
  • 300 grams of broccoli is enough for four servings. Wash, trim and chop the broccoli. Then cook the broccoli florets for about seven minutes. Then mash the vegetables with a fork and form meatballs from the mixture. You can now fry them as described above.
  • Oatmeal also works well as a filling. With 250 grams of oat flakes, 200 grams of quark, a grated zucchini, and paprika you can conjure up equally tasty vegetarian meatballs. The rest of the ingredients are the same as the basic recipe.
  • Here, mix the veggies and oatmeal first. Then add the low-fat quark and form the meatballs. The searing works as in the recipe above.
  • You can also use couscous instead of rice. You can easily prepare this. Add 1.5 times the amount of boiling water to the couscous and let it swell until all the water is gone. Then you can add grated vegetables and eggs and fry the meatballs.
